Katie Gillespie, PhD

Kathryn Gillespie, PhD, is an animal and food studies scholar dedicated to researching and publishing on the plight of animals in the food system and envisioning more sustainable futures not reliant on farming animals for food. She is Associate Director for the Center for Food Systems Transformation at the University of San Diego (where she works on institutional plant-based food transitions as a way to address the climate crisis) and VP of Research and Strategy for Farm Forward. She is the author of The Cow with Ear Tag #1389, a book based on original fieldwork about the lives of cows in the U.S. dairy industry, and The Sound of Feathers: Attentive Living in a World Beyond Ourselves.
